Apple Pancakes
Instructions
Prepare the batter:
In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
In another bowl, combine the milk, egg, melted butter, and vanilla extract (if using). Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.
Fold in the diced apples gently.
Cook the pancakes:
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
Pour about 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.
Serve:
Serve warm with maple syrup, extra diced apples, or a sprinkle of cinnamon sugar.

1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup milk (or milk alternative)
1 large egg
2 tablespoons melted butter (or vegetable oil)
1 cup peeled and diced apples (such as Granny Smith or Honeycrisp)
1/2 teaspoon vanilla extract (optional)
For serving:
Maple syrup
Additional diced apples (optional)
Cinnamon sugar (optional)
