Beet and Apple Slaw


  1. In a large bowl, combine the grated beets, grated apples, red onion, and parsley.
  2. In a small bowl, whisk together the dressing ingredients until well combined.
  3. Pour the dressing over the beet mixture and toss to coat evenly.
  4. Let the slaw sit for at least 30 minutes in the refrigerator before serving to allow the flavors to meld.


  • 2 medium red beets, peeled and grated
  • 2 medium apples, cored and grated
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley

For the Dressing:

  • 3 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
