Blueberry Pancake Sauce

Instructions 

  1. Combine Ingredients:
    • In a medium saucepan, combine the blueberries, sugar, lemon juice, and vanilla extract (if using).
  2. Cook the Sauce:
    • Heat over medium heat, stirring occasionally. If using frozen blueberries, it may take a few minutes for them to break down. Cook until the blueberries start to burst and the mixture becomes saucy, about 5-10 minutes.
  3. Thicken (Optional):
    • If you prefer a thicker sauce, mix the cornstarch with the water in a small bowl to create a slurry. Stir this into the blueberry mixture and cook for an additional 1-2 minutes until thickened.
  4. Serve 
    • Remove from heat and let it cool slightly before serving over pancakes.
