Pumpkin Hummus

Instructions:

  1. Blend the Hummus:
    • In a food processor, combine the chickpeas, pumpkin puree, tahini, olive oil, lemon juice, and garlic.
    • Add the cumin, smoked paprika, cinnamon, nutmeg, and a pinch of salt and pepper.
  2. Adjust Consistency:
    • Blend the mixture until smooth and creamy. If the hummus is too thick, add water, a tablespoon at a time, until you reach your desired consistency.
  3. Taste and Adjust:
    • Taste the hummus and adjust the seasoning by adding more salt, pepper, or lemon juice if needed.
  4. Serve and Garnish:
    • Transfer the hummus to a serving bowl.
    • Drizzle with a little olive oil, sprinkle with extra smoked paprika, and garnish with pumpkin seeds if using.
