Apple Pancakes

Instructions 

  1. Prepare the batter: 
    • In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. 
    • In another bowl, combine the milk, egg, melted butter, and vanilla extract (if using). Mix well. 
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine. 
    • Fold in the diced apples gently. 
  2. Cook the pancakes: 
    • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray. 
    • Pour about 1/4 cup of batter onto the skillet for each pancake. 
    • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. 
    • Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through. 
  3. Serve: 
    • Serve warm with maple syrup, extra diced apples, or a sprinkle of cinnamon sugar.

  • For the pancakes: 
  • 1 cup all-purpose flour 
  • 2 tablespoons sugar 
  • 1 tablespoon baking powder 
  • 1/2 teaspoon salt 
  • 1 teaspoon cinnamon 
  • 1 cup milk (or milk alternative) 
  • 1 large egg 
  • 2 tablespoons melted butter (or vegetable oil) 
  • 1 cup peeled and diced apples (such as Granny Smith or Honeycrisp) 
  • 1/2 teaspoon vanilla extract (optional) 
  • For serving: 
  • Maple syrup 
  • Additional diced apples (optional) 
  • Cinnamon sugar (optional)
