Instructions
- Prepare the batter:
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, combine the milk, egg, melted butter, and vanilla extract (if using). Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.
- Fold in the diced apples gently.
- Cook the pancakes:
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.
- Serve:
- Serve warm with maple syrup, extra diced apples, or a sprinkle of cinnamon sugar.
